    Simple Blueberry Balsamic Salad Dressing Recipe - This simple balsamic dressing
     is the perfect addition to all of your summer salads. Sweet blueberries and rich balsamic vinegar create an unmistakable taste of summer!

    We love making our own salad dressings that are free from preservatives and xanthan gum. Homemade dressings are so easy to put together using simple ingredients that you might already have on hand, and they taste so much better than the bottled stuff.

    We have paired this dressing with a Fresh Pea & Arugula Salad; however, it would be a great addition to any of your favorite salads this summer and throughout the year.     Why an Immersion Blender is Perfect for Homemade Salad Dressings and Sauces

    An immersion blender is one of my favorite kitchen tools for making homemade salad dressings and sauces. In just a few seconds, it creates smooth, creamy vinaigrettes, emulsifies oil and vinegar perfectly, and blends fresh herbs, garlic, and spices with ease. Best of all, you can make homemade salad dressing or sauce right in a mason jar or measuring cup, making cleanup quick and easy while delivering fresh, flavorful results every time.

    What You're Going to Need

    The ingredients for the blueberry balsamic dressing measured into separate bowls on a wooden board with a small spoon.
    • Blueberries - we used fresh blueberries, but frozen blueberries will work just as well.
    • Balsamic Vinegar - a mid-range balsamic is what we used for this recipe. You don't need the most expensive vinegar however, the least expensive might not have the richness of flavor and the sweetness needed for this recipe.
    • Honey - we live in Colorado and use a local wildflower honey for just about everything! Use your favorite local honey for flavor complexity and sweetness.
    • Olive Oil - extra virgin oil is our favorite to use when making salad dressings.
    • Mustard - adds so much background tanginess to salad dressing recipes, we recommend using a smooth Dijon mustard for this recipe.
    • Salt & Black Pepper - fresh ground black pepper works incredibly well with berries and cherries! We use kosher or sea salt for its purity.

    How to Make a Simple Blueberry Balsamic Dressing

    1. Measure the ingredients and place them in a mixing cup or a pitcher (our immersion blender came with this very useful jar with a lid).

    1. Combine the ingredients using an immersion blender until the dressing is smooth and emulsified.

    1. We love the color and texture that the blueberry skins have in the finished dressing.

    1. Place the dressing in a jar with a lid for storage in the refrigerator.

    Chef Tip

    If you don't have an immersion blender, you could use a classic blender with a pitcher. Always keep in mind when using a standard blender to make certain to have the liquid ingredients in the bottom of the pitcher. This ensures a smooth and complete blending together of all of the ingredients.

    Substitutions & Variations

    • Berries - if you have raspberries, strawberries, or blackberries they would be a delicious substitute for the blueberries.
    • Balsamic Vinegar - can be replaced with red wine vinegar, however you would need to adjust the amount of honey by a couple of tablespoons for added sweetness.
    • Fresh Blueberries - can be replaced with frozen blueberries, however you will need to defrost the berries and strain out any excess liquid in order to avoid having a watery dressing.

    Storage & Helpful Hints

    Store your dressing in an airtight container in the refrigerator for 5-6 days. We like to store dressings and sauces in mason jars in the back section of the refrigerator for the best results.

    When you are ready to use the dressing remove it from the refrigerator for 10 minutes or so and give it a stir to combine the ingredients before using it.

    Ingredients
      

    • 8 oz. fresh blueberries cut weight by 6 oz. if you are using frozen berries.
    • ½ cup balsamic vinegar
    • ¾ cup olive oil extra virgin
    • 3 Tbsp. honey we love local wildflower honey
    • 1 Tbsp. smooth Dijon mustard
    • 1 teaspoon salt we love sea salt or kosher
    • ½ teaspoon black pepper we always recommend using fresh ground black pepper

    Equipment

    • 1 Immersion blender or conventional blender
    • 1 Pitcher or large measuring cup
    • 1 liquid measuring cup
    • 1 measuring spoons
    • 1 Kitchen Scale for weighing the blueberries

    Method
     

    1. Place all of the ingredients into a pitcher or a large measuring cup and using an immersion blender blend the ingredients together until smooth and creamy. If you are using a conventional blender, make certain to add the liquid to the blender first. Then blend until combined and smooth.
    2. Place the finished dressing in a container and store in the refrigerator.
