Simple Blueberry Balsamic Salad Dressing Recipe

This simple balsamic dressing is the perfect addition to all of your summer salads. Sweet blueberries and rich balsamic vinegar create an unmistakable taste of summer!

Ingredients
  

  • 8 oz. fresh blueberries cut weight by 6 oz. if you are using frozen berries.
  • ½ cup balsamic vinegar
  • ¾ cup olive oil extra virgin
  • 3 Tbsp. honey we love local wildflower honey
  • 1 Tbsp. smooth Dijon mustard
  • 1 teaspoon salt we love sea salt or kosher
  • ½ teaspoon black pepper we always recommend using fresh ground black pepper

Equipment

  • 1 Immersion blender or conventional blender
  • 1 Pitcher or large measuring cup
  • 1 liquid measuring cup
  • 1 measuring spoons
  • 1 Kitchen Scale for weighing the blueberries

Method
 

  1. Place all of the ingredients into a pitcher or a large measuring cup and using an immersion blender blend the ingredients together until smooth and creamy. If you are using a conventional blender, make certain to add the liquid to the blender first. Then blend until combined and smooth.
  2. Place the finished dressing in a container and store in the refrigerator.
