How to Make Fresh Pea & Asparagus Salad with Pistachios and Feta

- Cut the raw asparagus into 2-inch pieces then add them to a pot of boiling water to cook until tender but still crisp.

2. Remove the asparagus from the boiling water and place it into a bowl of ice and water (an ice bath) in order to stop the cooking and leave the asparagus a bright green color.

- Cut the snow peas in half and chop the pistachios. Then combine all of the salad ingredients in a large bowl.

- Add the blueberry balsamic dressing and toss together to coat and combine.
Chef Tip
Using an ice bath to quickly cool down vegetables after cooking in boiling water is referred to as blanching and shocking. This technique is used for many applications by professional Chefs and can be quite useful in your kitchen as well. Think about having certain vegetables partially cooked for holiday meals and special dinners, making it easier to finish at the moment for flavor and time saving. In addition, it's great for cooking tougher vegetables for use in salads and cold dishes.
Substitutions & Variations
- Arugula - can be substituted with spring greens if you are not a fan of the peppery greens.
- Cheese - goat cheese can easily be swapped for feta cheese, and it would add extra creaminess.
- Nuts - can be eliminated for nut allergies and replaced with croutons for extra crunch.
- Dressing - the blueberry balsamic dressing I created for this salad is easy and delicious however, if you have a favorite dressing try it out. I think a balsamic vinaigrette, lemon dressing or even a blue cheese dressing would work really well.
- Snow peas - can be substituted with sugar snap peas if they are fresher, always look for the freshest produce available.
- Peas - if fresh aren't available frozen will work just as well, just make certain to defrost them and drain out any excess water before adding them to the salad.
Storage & Helpful Hints
This fresh asparagus salad is best when served right after tossing it together. However, to save time you could prepare all of the ingredients and store them separately until you are ready to serve it. Ingredients should be stored in the refrigerator except for the nuts, its the best way to keep everything fresh and crisp.

Fresh Pea & Asparagus Salad with Pistachios and Feta

- Measure the arugula, pea shoots, micro greens, peas, blueberries, and feta cheese and combine them in a large mixing bowl.
- Cut the asparagus into 2-inch pieces. In a 4-quart saucepan bring water to a boil, place the asparagus into the boiling water and cook until tender and bright green. Remove the asparagus from the water and place it into a bowl containing ice and water (an ice bath). In order to stop the cooking and maintain its bright green color.
- Strain the cooled asparagus from the ice water and add it to the large mixing bowl containing the other ingredients.
- Using a sharp knife roughly chop the pistachio nuts and add them to the mixing bowl.
- Cut the ends off of the snow peas and cut them in half, add them to the large mixing bowl.
- Add the salad dressing and toss to coat and combine the ingredients.
