    Crunchy Thai-Style Slaw with Lime & Peanuts

    Ingredients
      

    • ¾ lb. red cabbage
    • ¾ lb. green cabbage
    • 8 oz. shredded carrots
    • 2 Tbsp. Thai basil
    • 4 Tbsp. fresh mint
    • 2 large green onions
    • 6 oz. salted peanuts
    • 2 large limes juiced
    • ¼ cup honey
    • ¼ cups rice wine vinegar
    • 1 Tbsp. Sriracha
    • 1 Tbsp. fish sauce
    • 1 teaspoon salt
    • ½ teaspoon black pepper

    Equipment

    • 1 Sharp knife
    • 1 Large Bowl
    • 1 small bowl
    • 1 box grater
    • 1 citrus juicer or a large fork will do.
    • 1 Cutting Board
    • 1 Measuring Spoon Set
    • 1 Measuring cup set
    • 1 Kitchen Scale
    • 1 mixing spoon

    Method
     

    1. Slice the red and green cabbage with a sharp knife into thin slices.
    2. Using a box grater, grate the peeled carrots on the wide shred option.
    3. Place the prepared vegetables into a large bowl.
    4. Remove the Thai basil leaves and the fresh mint leaves from the stems and rough chop both. Place the chopped herbs into a small bowl.
    5. Using a sharp knife chop the peanuts and add them to the large bowl with the vegetables.
    6. Squeeze the fresh lime juice into the small bowl with the herbs. Slice the green onions and add them to the small bowl with the lime juice and herbs.
    7. Measure the honey, rice wine vinegar, Sriracha, fish sauce, salt and black pepper, and add them all to the small bowl with the lime juice and fresh herbs. Stir to combine the ingredients.
    8. Add the dressing to the large bowl with the vegetables and peanuts and toss together evenly coating the vegetables and peanuts with the dressing.

    How to Make Crunchy Thai-Style Slaw

    1. Thinly slice the red and green cabbage, shred the carrots, and chop the peanuts. Add them all to a large bowl. Combine the remaining ingredients together in a small bowl and stir to combine.

    1. Toss all of the ingredients together in the large bowl, making sure to coat the vegetables evenly with the dressing.

    Chef Tip

    A quick and easy way to save prep time when making this crunchy Thai slaw is to use a bag of already sliced coleslaw mix available in the fresh produce department at your local grocery store.

    Substitutions & Variations

    • Cabbage - you could substitute napa cabbage for the green cabbage for a milder flavor.
    • Vegetarian - you could eliminate the fish sauce entirely for a vegan & vegetarian option.
    • Cilantro - adding fresh cilantro would be a great addition to this easy recipe.
    • Peanuts - can be eliminated if you have a peanut allergy and replaced with toasted sesame seeds.
    • Spicy - add more sriracha for a spicy coleslaw recipe.
    • Snow peas or red bell pepper - add snow peas and red bell pepper for extra crunch and more veggies!

    Storage & Helpful Hints

    For the best storage place the coleslaw mixture into an airtight container in the refrigerator. This colorful Asian slaw is the sort of salad that only tastes better the next day! It will taste the best if eaten within 4 days and is a great recipe
     for weekly meal planning.

    A great way to turn this perfect side dish into a light and delicious dinner is by adding rotisserie chicken and a few more vegetables including red bell pepper, red onion, and for extra crunch try some snow peas!

    Can I use a food processor to chop the peanuts?

    You absolutely can use a food processor to chop the peanuts, a sharp knife will work every time, but a food processor is more convenient for certain. Just make sure to quickly use the pulse function in order to have chopped peanuts and not peanut butter.
