Easy Corned Beef Hash - Every St. Patrick's Day we cook two corned beef brisket roasts, so we have one leftover to make our favorite corned beef and potato hash. Even if you don't have an extra corned beef this recipe is the perfect way to use up your St. Patrick's Day leftovers. In addition to using the leftover corned beef, and leftover potatoes we go ahead and add the cooked cabbage as well.

Simple Leftover Corned Beef, Cabbage, & Potato Hash Recipe

Method
- Cut the corned beef brisket, potatoes, and onions into ¼ inch cubes. Chop up the cooked cabbage to approximately the same size.
- In a large skillet over medium-high heat add ½ of the butter.
- Once the butter is melted add the diced onion and cook for 2-3 minutes or until they are translucent.
- Add the potatoes and cooked cabbage to the skillet and stir to combine and coat everything in the melted butter.
- Add the corned beef and salt and black pepper. Stir again to combine all the ingredients.
- Reduce to medium heat and press the ingredient down in an even layer.
- Add the remaining butter to the skillet, and allow it to melt.
- After 2-3 minutes use a spatula and turn the hash revealing the crispy under crust.
- Flip all of the hash over and press it down in the pan in an even layer in order to brown the top layer.

How to Make Hash with Leftover Corned Beef and Cabbage

- Melt half of the butter over medium-high heat in a large skillet.

- Add the diced onion and cook until translucent.

- Add the cooked cabbage and stir to combine everything with the melted butter.

4. Then add the potatoes stirring again to coat the potatoes with melted butter.

5. Finally add the leftover corned beef, salt and black pepper, and stir to combine all of the ingredients.

6. Reduce to medium and using a spatula press the hash down in an even layer.

7. Add the remaining butter and allow it to melt.

8. Flip the hash and press it down again into an even layer and brown the other side.

Making certain to press everything down into a even layer really goes a long way in making the hash crispy and golden brown. The Crisp edges are what make this simple hash recipe really special.
Substitutions & Variations
- Potatoes - we used Yukon gold potatoes when making our corned beef and cabbage dinner, however, red potatoes would work perfectly. If you don't have leftover potatoes to use, go ahead and boil potatoes until they are fork tender before using them in the corned beef hash.
- Cabbage - again if you don't have any leftover cabbage go ahead and chop up some fresh cabbage, just cook it a few minutes longer.
- Vegetables - you can add green bell pepper to the mix for some added flavor and texture.
- Corned Beef - if you don't have leftover corned beef available you could substitute roast pork, or even roast beef.
Storage & Helpful Hints
We normally don't have any leftovers of this leftover corned beef hash! However, you can place it in an airtight container in the refrigerator for 4 days. Simply reheat it in a skillet on the stove top and top it with a fried egg for delicious breakfast or dinner any day or night of the week.
