What You're Going to Need!

- Chicken - we used boneless skinless chicken breasts for this recipe, but boneless skinless chicken thighs will work just as well.
- Garlic - fresh garlic really adds lots of flavor and is our first choice, but garlic powder will work in a pinch.
- Olive oil - we recommend using an olive oil blend because it has a higher smoke point.
- White balsamic vinegar - is a great addition to this tangy balsamic marinade.
- Brown sugar - adds just the right amount of sweetness.
- Fresh herbs - add so much delicious flavor to this simple recipe! However dried herbs can be substituted if fresh are not available.
- Salt - sea salt is our choice in this recipe.
- Black pepper - freshly ground is our favorite.
- Lemon - fresh lemon juice adds the right amount of tanginess.

White Balsamic Herb Marinated Grilled Chicken Breast

Method
- Prepare the fresh herbs, juice the lemon, and mince the garlic.
- Cut the chicken breasts into 6 equal pieces, slice the breasts in half to ensure even marinating and cooking.
- Combine the fresh herbs, garlic, lemon juice, olive oil, white balsamic, brown sugar, sea salt, and black pepper in a mixing bowl and combine using a wire whisk.
- Place the prepared chicken into a shallow dish and pour the marinade over the chicken and make sure the chicken is covered with the marinade, Cover the dish with plastic wrap and place in the refrigerator for at least 6 hours.
- Remove the chicken from the refrigerator and heat your grill to at least 400 ℉. Then using a wire grill brush clean the grill grates, then spray the grates with cooking spray.
- Carefully place the chicken onto the heated grill and allow to cook for 5-7 minutes before turning it on an angle creating cross hatched grill marks.
- After about 12 minutes turn the chicken over and repeat the same cross hatching on the other side. Cook the chicken for another 12 minutes or until using an instant-read thermometer reads 165 ℉ in the thickest part of the chicken breast.
- Place the chicken into aluminum foil and fold it over creating a pouch to allow the chicken to rest for 5-7 minutes for juicy chicken breasts every time!

- Chop the fresh herbs, juice the lemon, and combine the remaining ingredients in a mixing bowl.

2.Add the prepared fresh herbs (or dried) and lemon juice to the bowl. Using a wire whisk mix the ingredients together.

- Cut the chicken breasts into 6 equal pieces and place them in a shallow dish. Cover the chicken with the balsamic marinade, place plastic wrap over the dish and place it in the refrigerator for 6 hours.

4. Cook on a 400-degree f grill on both sides until the internal temperature reaches 165 degrees f.
Chef Tip
The longer you marinade the chicken breasts the better the flavor will be! We recommend at least 6 hours. However, overnight in the refrigerator would be ideal.
we love using ziplock bags to marinade meats. Just simply place the meat into a large ziplock bag, add the marinade, and place it in the refrigerator. Go ahead and turn the bag over ensuring the marinade coats the meat a least twice while marinating.
In addition, having your grill grates preheated to at least 400 degrees f, cleaned with a grill brush, and oiled with a rag soaked in oil or sprayed with cooking spray will achieve the best results.
Substitutions & Variations
- White balsamic- if you can't find white balsamic vinegar, you can use regular balsamic vinegar. We love the depth of flavor balsamic vinegar adds to this simple marinade.
- Fresh herbs- if you don't have fresh herbs using dry will work. However, you will have to cut the quantities in half.
- Chicken breasts- using boneless skinless chicken thighs is a great substitute for the chicken breasts.
- Vegan- a great way to use this simple marinade is for grilled vegetables, we love grilling onions, zucchini, eggplant, and peppers all summer long!
Storage & Helpful Hints
The marinade can be made ahead of time and stored in an airtight container in the refrigerator for up to a week.
When marinating chicken or any meat, make sure the meat is evenly covered with the marinade for the best results,

this is THE best recipe . . . we've made it three times already for dinner guests - and they love it! When it is too rainy/windy to grill . . . we put the chicken in the oven at 350 for about 40 minutes.
