For this spritz recipe we have used a lavender syrup, however if you grow lavender as we do you could use your own lavender to make a lavender simple syrup. I love garnishing this fragrant concoction with fresh lavender sprigs adding a subtle floral aroma and garden-fresh beauty to this elegant floral spritz.

For more garden inspired spritzes try our Thai garden spritz and our Mint & Lemon Prosecco Sparkler. We love a sparkling & refreshing spritz on a warm summer afternoon and this drink tastes just like a summer day.

    What You're Going to Need!

A bottle of sparkling water, lavender syrup, and rose` with fresh lavender flowers and a jar with lavender syrup on a wooden tray.
    • Lavender Syrup - we used store bought lavender syrup from The French Kitchen in Colorado Springs. However, you could use your own lavender from the garden and make this lavender simple syrup.
    • Rose`- bright and chilled can make any day a celebration! Rose` cocktails are a really special way to celebrate.
    • Sparkling water - we love the pure refreshing flavor and effervescence of Purely Sedona Water.
    • Lavender Sprigs - add a delightfully botanical flavor and a subtle floral aroma, and their vibrant purple hue is just beautiful.

    See recipe card for quantities.

    1. Garnish with fresh lavender sprigs and sit back and enjoy your botanical lavender spritz cocktail!

    Chef Tip

When making your own lavender simple syrup add a couple of tablespoons of butterfly pea flowers in order to brighten the purple color of the lavender flowers. The pigmentation of the butterfly pea flower is a beautiful bright purple color.

Be mindful of the number of lavender flowers you are adding to the syrup, lavender can create a very strong flavored syrup.

    Substitutions & Variations

    • Rose`- can be replaced with white grape juice making a refreshing sparkling mocktail.
    • Gin -you can use empress or purple gin for additional alcohol, botanical flavors, and purple color.
    • Bubbles - use your favorite brand of prosecco for added bubbles in addition to the rose`!
    • Lavender lemonade - can be used to replace the wine, creating a bright sparkling lavender mocktail.

    Storage & Helpful Hints

These bright cocktails are meant to be enjoyed right away, however if you chose to make your own lavender simple syrup you can make it days ahead of time.

To make your rose` cocktails really special freeze lavender flowers and lemon slices into your ice cubes for an added festive touch.

Whenever you are using lavender in food and beverage recipes try to find organic culinary lavender buds for the best color and flavor. While all lavender is technically edible and safe to ingest, not all lavender tastes great. The best variety for cooking is the English garden variety; it has the lowest amount of camphor. The French and Spanish varieties have the highest amounts of camphor and therefore have a bit of a soapy flavor.
