    This creamy vegan avocado dressing recipe is loaded with healthy fats, tangy flavor, and fresh ingredients! With a few simple steps this easy recipe is the perfect way to add so much flavor to your next salad.

    Ingredients
      

    • 10 oz. Fresh avocado pulp
    • 2 oz. Yellow or sweet onions
    • 1 large Lime juiced
    • 1 oz. White balsamic vinegar or apple cider vinegar
    • 4 oz. Extra virgin olive oil
    • 1 oz. Flat leaf parsley leaves
    • ½ oz. Fresh chives
    • ½ oz. Fresh basil leaves
    • 1-2 cloves Fresh garlic
    • 1 teaspoon Sea salt
    • ½ teaspoon Black pepper

    Equipment

    • 1 Cutting Board
    • 1 Chef Knife
    • 1 Kitchen Scale
    • 1 liquid measuring cup
    • 1 Immersion blender
    • 1 Cup for the immersion blender
    • 1 Measuring Spoon Set

    Method
     

    1. Cut the avocados in half and remove the pits. Using the tip of a sharp knife make cuts across the avocado flesh, then use a spoon to scoop out the pulp into a bowl.
    2. Pull the leaves of the basil and parsley from the stems. Cut the chives into ½ inch pieces.
    3. Peel the garlic cloves and smash them with a knife, crushing the cloves.
    4. Juice the lime and measure the white balsamic and olive oil.
    5. Add all of the ingredients except the olive oil to a pitcher or the tall cup that often comes with your immersion blender.
    6. Using your immersion blender on medium speed combine the ingredients. Add the olive oil and continue blending until the dressing has a creamy texture.

    How to Make the Creamiest Vegan Avocado Salad Dressing!

    1. Measure and prepare all of the ingredients. For now, keep the olive oil separate.

    2. Start blending with the immersion blender and add the olive oil.

    3. Continue blending on medium speed.

    4. Blend until the dressing has a smooth and creamy consistency.

    Chef Tip

    The best thing about this delicious creamy avocado dressing is that the flavor improves as it sits in the refrigerator! And the color remains a beautiful bright green with the addition of the lime juice and vinegar. The acid will act to prevent the avocados from turning brown. So go ahead and make a full batch to enjoy with salad, tortilla chips or as a dip for fresh veggies.

    Substitutions & Variations

    This creamy vegan dressing is gluten-free and vegan. However, there are some substitutions that can be made to change things up.

    • Fresh herbs - we used chives, basil, and parsley, however fresh cilantro or oregano would be great substitutions.
    • Extra virgin olive oil - we love our olive oil! But avocado oil would be a great substitute.
    • White balsamic - adds a delightful sweet and sour tangy flavor, but any light-colored vinegar would work well, including apple cider vinegar and white wine vinegar.

    Storage & Helpful Hints

    This easy to make healthy dressing can be made ahead and stored in an airtight container in the refrigerator for 3-4 days.

    In order to best create the creamy texture, make sure you are using ripe and room temperature avocados. If you need to adjust the thickness of this creamy sauce add a little bit of water to thin it out.

    Fresh herbs and tangy lime juice are critical to the vibrant and fresh flavors of this creamy dressing.

    In addition, if you don't have an immersion blender you could use a food processor. Add the olive oil once the ingredients have started to blend together.

    Could I use green onions instead of yellow onions?

    You could substitute green onions for yellow onions. However, you will have to add more of them to achieve the onion flavor in this recipe.
