We love the combination of mascarpone cheese and asiago for this recipe. However, your personal preference of any combination of cheeses will work great! First things first, choosing the right potatoes. We love Yukon gold potatoes for the creamiest mashed potatoes. Russet potatoes are great for baked potatoes but can produce a mealy texture when used for making mashed.

Reheating Mashed Potatoes
There are a variety of techniques you can use to reheat mashed potatoes. We prefer the oven method best. The oven method involves placing the cooked mashed potatoes into an oven safe casserole pan and covering it loosely with aluminum foil. Place the pan in a preheated 350-degree F oven for 25-30 minutes or until hot in the center. This method creates a crusty cheesy edge that's irresistible! However, you could simply place the mashed potatoes into a microwave safe bowl covered with plastic wrap and heat it on high, stirring every 2-3 minutes ensuring that you heat it evenly throughout. Regardless of how you choose to reheat your mashed potatoes, the best part is that during a busy holiday season knowing you can successfully make one of the recipes days ahead of time can be a great help!

Easy Creamy Cheesy Mashed Potatoes!

Instructions
STEP ONE - Peeling, Dicing & Cooking
Peel and dice the potatoes into large and evenly sized pieces. Place the potatoes into a large pot filled with salted water and bring to a boil. Cook the potatoes until fork tender.
Once the potatoes are fork tender, drain the water and place the butter on to the hot potatoes in small pieces.
STEP TWO - Mash, Season, & Finish
Using a potato masher, mash the cooked potatoes with the room temperature
half & half.
At this point add the salt and black pepper and continue to mash the potatoes.
Add the sour cream, and continue to use the potato masher to mash the potatoes and combine the ingredients.
Add the mascarpone and asiago cheese and continue mashing and combining the ingredients using the potato masher.
Helpful Hint
Adding the butter in small pieces to the hot potatoes is the beginning of creamy mashed potatoes. In addition, heating the half & half or using it room temperature, in order to not cool the potatoes down.
Substitutions
- Half & Half - you could use whole milk or even low-fat milk to reduce the calories.
- Milk free - extra creamy oat milk makes a great substitute for the half & half.
- Vegan - vegan cheese and butter could be substituted to create a vegan recipe.
Variations
- Cheese - different cheeses can certainly be used, for instance, Monterey jack cheese, parmesan cheese, or even mozzarella cheese.
- Green onions - or fresh chives make a great addition to these creamy mashed potatoes.
- Sour cream - can be replaced with plain Greek yogurt for added tangy flavor.
Storage & Reheating
This easy recipe can be made ahead, stored in an airtight container in the refrigerator for 2-3 days. My favorite way to reheat these creamy cheesy mashed potatoes is in an oven safe casserole dish covered loosely with aluminum in a 350-degree F oven until hot in the center.
Chef Tip
To avoid making gluey mashed potatoes, we recommend not using a hand mixer or stand mixer to whip your potatoes. Over working the potatoes can cause the starch in the potatoes to become stringy and gluey.

Equipment
- 1 large pot
- 1 colander
- 1 Chef Knife

Ingredients
- 2 lbs. Yukon gold potatoes
- 4 oz shredded asiago cheese
- 2 oz sour cream
- ¾ cup half & half
- 4 oz butter unsalted
- 2 teaspoon salt sea salt (1 teaspoon for the cooking water)
- ½ teaspoon black pepper freshly ground
Instructions
- Peel the potatoes and cut them into large pieces.
- Place the potatoes into a large pot of water and add about 1 teaspoon of salt.
- Bring the water to a boil and cook the potatoes for 20-25 minutes or until fork tender.
- Strain the potatoes in a colander, place the cooked potatoes back into the pot.
- Add the butter in small pieces to the hot potatoes.
- Using a potato masher, mash the potatoes and the butter, Add the room temperature or warmed half & half to the pot along with the salt and pepper. Continue to mash and combine the ingredients.
- Add the shredded asiago cheese and mascarpone cheese to the pot and continue to use the potato masher to mix and combine the ingredients until creamy.
- Taste and adjust the seasoning if necessary and enjoy!
