Easy Creamy Cheesy Mashed Potatoes

Ingredients
  

  • 2 lbs. Yukon gold potatoes
  • 4 oz shredded asiago cheese
  • 2 oz sour cream
  • ¾ cup half & half
  • 4 oz butter unsalted
  • 2 teaspoon salt sea salt (1 teaspoon for the cooking water)
  • ½ teaspoon black pepper freshly ground

Equipment

  • 1 large pot
  • 1 colander
  • 1 Chef Knife
  • 1 Cutting Board
  • 1 peeler
  • 1 potato masher
  • 1 Kitchen Scale
  • 1 Measuring Spoon Set
  • 1 Measuring cup set

Method
 

  1. Peel the potatoes and cut them into large pieces.
  2. Place the potatoes into a large pot of water and add about 1 teaspoon of salt.
  3. Bring the water to a boil and cook the potatoes for 20-25 minutes or until fork tender.
  4. Strain the potatoes in a colander, place the cooked potatoes back into the pot.
  5. Add the butter in small pieces to the hot potatoes.
  6. Using a potato masher, mash the potatoes and the butter, Add the room temperature or warmed half & half to the pot along with the salt and pepper. Continue to mash and combine the ingredients.
  7. Add the shredded asiago cheese and mascarpone cheese to the pot and continue to use the potato masher to mix and combine the ingredients until creamy.
  8. Taste and adjust the seasoning if necessary and enjoy!
