Roasted Chicken Salad with Dijon and Tarragon- Being classically French trained, the flavors in this classic recipe feel like home. Many traditional chicken salad recipes that I've seen rely too heavily on dressing and overly powerful seasoning. Whereas this one allows the taste of the chicken to be the star of the show! Served as a sandwich with sourdough bread or in lettuce cups, it's a great way to use up leftover rotisserie chicken or leftover roast chicken!
The unique flavor of the fresh tarragon sings alongside the tangy bite of Dijon. With just enough creamy mayo to bring some creamy texture to the mix. Then your teeth bite into the crunchy texture of diced bits of onion, (releasing a bit of sweetness) then crisp celery, (there to cleanse your palate before it becomes overwhelmed), and finally the tender roasted chicken. In my opinion it's the perfect bite! Try it out, I think that you'll agree that this is a truly a sublime version of chicken salad and my favorite way to use leftover chicken.
This easy recipe is so super simple, just a little bit of knife work, mixing it up, and "Bob's your uncle!", (who's Bob, he's not my uncle. sorry...), make a sandwich, pile it onto some fresh greens, or just eat it with a fork, it's that good!

Cherry Mascarpone Cheese Crostata Tart Recipe
The next time that you're looking for an easy to bake dessert that's sure to impress, try this cherry mascarpone crostata. With minimal prep time, you can create this rustic masterpiece, with a golden-brown pie crust, rich mascarpone filling, and sweet cherries.
Ingredients
- Roasted Chicken - Cut into bite sized chunks, it could be from our recipe or a store-bought rotisserie chicken.
- Mayonnaise - We love Dukes mayonnaise, the full calorie or light version.
- Dijon Mustard - We love this delicious tangy French mustard.
- Celery - Crunchy celery adds the perfect texture for this recipe
- Sweet Onion - Sweet summer onions are the best choice for this salad, however red onion or even green onions will work as well.
- Tarragon - This slightly anise flavored herb is perfect for chicken. Fresh tarragon is always the best, but dried tarragon will work in a pinch!
- Salt and Pepper - To taste, we always choose black pepper.
Instructions
Place all of the ingredients into a mixing bowl.
Once everything is chopped and measured, just put it in a large bowl and mix it up!
Once everything is mixed up, season with salt and black pepper to taste.
Serve over some fresh butter lettuce and sliced fresh bread and enjoy!
Helpful Hint
Using a whole roasted, or rotisserie chicken, really does add to the flavor of this recipe. You can make it with chicken breast, however, the flavor is much more intense with a whole roasted bird!
Substitutions
This simple chicken salad can be adjusted easily to suit any taste.
- Herbs - If tarragon is not available or if it is not your favorite flavor, substitute basil, parsley, or chives.
- Dijon Mustard - We love Dijon in the Season Two Taste house. However, any favorite mustard would work well.
- Light Mayonnaise - We love the flavor and reduced calorie count of Duke's light mayonnaise! But feel free to use the mayonnaise of your choice (Greek yogurt would make a great substitute for mayo).
Storage
The mixed chicken salad will remain fresh and delicious in the refrigerator for 4 days in a tightly sealed container. The perfect make ahead light lunch for spring and summer!
Chef Tip
This salad always tastes better when made ahead of time. Mix the ingredients together and allow some time for the ingredients to meld.

- 1 Large mixing bowl
- 1 mixing spoon
- 1 measuring spoons
- 1 set of measuring cups
- 1 Kitchen knife
- 1 Cutting Board
Ingredients
- 10 ounces Roasted chicken cut into bit sized chunks could be from our recipe or a store bought rotisserie chicken
- ¾ cup Mayonnaise we love Dukes mayonnaise the full calorie or light version
- 2 tbsps. Dijon mustard
- 3 oz. Sweet onion small diced
- 4 oz. Celery small diced
- 1-2 tablespoon Fresh tarragon chopped, adjust according to taste
- Salt and black pepper to taste
Instructions
- Chop the chicken into bite sized chucks (the size of the pieces is based on your preference)
- Add chicken to the large mixing bowl
- Dice the celery and onion
- Chop the tarragon
- Measure the mayonnaise and mustard
- Add all ingredients to the mixing bowl with the chicken
- Season to taste with salt and black pepper
- Mix together making sure to evenly combine the ingredients, put it in a storage container and place in the refrigerator to chill
- Use the chicken salad to make a sandwich on desired bread or serve with lettuce
