- In a 10-12 oz. microwave safe mug combine the flour, salt, sugar, and baking powder using a small whisk or spoon.
- Cut the strawberries into small, diced pieces and set aside.
- Combine the milk and butter in a microwave safe dish and microwave on high for 10 -15 seconds or until the butter is melted.
- Add the milk and butter mixture to the dry ingredients in the mug and mix until smooth. Add the diced strawberries and stir to combine evenly.
- Place the mug into the microwave oven and cook on high for 1minute and 18-20 seconds, or until the cake bounces bake when touched.
- Place the cream, icing sugar, and vanilla extract into a large bowl. Using a wire whisk whip the mixture until it's thick and fluffy. You can use an electric mixer for easier and quicker results.
- Scoop a generous amount of whipped cream onto the strawberry cake and add additional sliced strawberries and enjoy!
