    Ingredients
      

    The Mug Cake
    • 4 Tbsps. All-purpose flour
    • 2 Tbsps. Granulated sugar
    • ¼ tsp. Baking powder
    • ⅛ tsp. Salt
    • 2 oz. Fresh Strawberries about 2 large strawberries
    • ¼ tsp. Vanilla extract
    • 3 Tbsps. Milk (dairy free milk can be used)
    • 1 Tbsp. Butter unsalted
    Whipped Cream
    • ½ cup Heavy cream
    • ¼ cup Icing sugar
    • ½ tsp. Vanilla extract

    Equipment

    • 1 Microwave-safe mug 10-12 oz mug
    • 1 Measuring Spoon Set
    • 1 Microwave-safe dish
    • 1 Small whisk or spoon for mixing the batter
    • 1 Large Bowl for mixing the whipped cream
    • 1 wire whisk for whipping the cream
    • 1 Cutting Board for cutting the strawberries
    • 1 Kitchen knife for cutting the strawberries
    • 1 Measuring Cup ½ cup

    Method
     

    1. In a 10-12 oz. microwave safe mug combine the flour, salt, sugar, and baking powder using a small whisk or spoon.
    2. Cut the strawberries into small, diced pieces and set aside.
    3. Combine the milk and butter in a microwave safe dish and microwave on high for 10 -15 seconds or until the butter is melted.
    4. Add the milk and butter mixture to the dry ingredients in the mug and mix until smooth. Add the diced strawberries and stir to combine evenly.
    5. Place the mug into the microwave oven and cook on high for 1minute and 18-20 seconds, or until the cake bounces bake when touched.
    Whipped Cream
    1. Place the cream, icing sugar, and vanilla extract into a large bowl. Using a wire whisk whip the mixture until it's thick and fluffy. You can use an electric mixer for easier and quicker results.
    Assembly
    1. Scoop a generous amount of whipped cream onto the strawberry cake and add additional sliced strawberries and enjoy!

    How to Make a Strawberry & Cream Mug Cake

    Ingredients for strawberry and cream mug cake.
    1. Gather the ingredients and using a spoon or small whisk combine the dry ingredients in a microwave-safe large mug. Dice the strawberries and set aside.
    Diced strawberries in a bowl, mug cake batter in a mug with a whisk.
    1. In a microwave-safe dish heat the milk and butter until the butter melts (about 30 seconds). Add the warm milk and butter to the dry ingredients in the mug and stir to combine.

    1. Add the diced strawberries to the batter and combine evenly distributing the strawberries.

    1. Cook in a microwave set on high for 1 minute 18 seconds or until the cake is cooked and bounces back when touched.

    1. In a large bowl using a wire whisk, whip the heavy cream, vanilla extract and the icing sugar until it's thick and fluffy.

    This simple and easy dessert can be set up ahead of time by combining the dry ingredients and placing them into storage containers. Then when you are ready for a sweet treat simply add the fresh berries, the milk, and the butter to a large microwave-safe mug. Voila, you have a warm and delicious strawberry cake ready for some homemade whipped cream or a scoop of vanilla ice cream! 

    Substitutions & Variations

    • Milk - can be substituted with a non-dairy milk as well as the whipped cream can be substituted with a non-dairy whipped topping.
    • Flour - gluten-free flour can be used to substitute the all-purpose flour.
    • Chocolate - adding a tablespoon of cacao powder will result in a chocolate strawberry mug cake!
    • Fresh berries - try using raspberries or blueberries for a little different take on the strawberry flavor.

    Storage & Helpful Hints

    These delightful little treats are best made fresh and enjoyed right away. However, you can mix the dry ingredients together store them in separate containers for easy access the next time you are craving a sweet treat. Just add the fresh berries, milk, and butter and place in the microwave for an easy dessert!
