    Refreshing Lemon Mint Prosecco Spritz Cocktail

    Lemon Mint Prosecco Cocktail - With just four simple ingredients, (sparkling wine, fresh mint leaves, lemon juice, and sugar), you can make this delicious effervescent cocktail. It's the perfect drink for a hot summer day!

    When we set out to make a summer cocktail, a major inspiration was right in our own backyard. One of my favorite fresh garnishes is a mint sprig. It's a great way to make a refreshing cocktail beautiful and aromatic. We knew it should be a light drink, over some ice cubes, thirst quenching as opposed to really strong. With a bottle of prosecco and some garden inspiration, we created this lemon mint spritz.

    This post is part of a larger series that we are working on to feature easy cocktails and mocktail recipes. We created the hibiscus margarita mocktail, which is a refreshing drink with or without alcohol.

    What You're Going to Need!

    • Water - they call it a simple syrup because sugar and water is all that it takes!
    • Fresh Mint - this is fresh spearmint from our garden, any mint will work wonderfully, as long as it is fresh.
    • Lemons - fresh lemon juice is one of the key ingredients to make this delicious cocktail.
    • Sugar - the other 50% of simple syrup, (honey or agave can be subbed to lower the glycemic index).

    Ingredients
      

    Mint Simple Syrup
    • 1 cup Sugar
    • 1 cup Water
    • 2 oz. Fresh mint leaves
    Lemon Spritz
    • 5 large Lemons juiced
    • 1 batch Mint simple syrup
    • 1 bottle Prosecco or sparkling nonalcoholic cider
    • 6 sprigs Fresh mint for garnish
    • Ice for shaking the simple syrup and lemon juice

    Equipment

    • 1 Cocktail Shaker
    • 1 small saucepan
    • 1 Set measuring cups
    • 1 Kitchen knife to cut the lemons
    • 1 Cocktail Strainer
    • 1 citrus juicer or a fork for juicing the lemons
    • Glasses for Serving

    Method
     

    Making the Simple Syrup
    1. Add the water and sugar to a small saucepan, add place over medium heat.
    2. Once the sugar is dissolved, add the mint leaves and remove from heat.
    3. Once it's cool enough, place in a container and refrigerate 12 hours or more.
    Creating the Cocktail
    1. Strain the syrup into a mason jar or pitcher with ice.
    2. Cut the lemons in half and juice them into the container containing the mint syrup and ice.
    3. Add ice and shake!
    4. Pour into glasses dividing evenly (more syrup mixture equals a sweeter cocktail) top off with Prosecco, garnish with fresh mint sprigs, and enjoy! Cheers!

    How to Make a Lemon & Mint Prosecco Spritz

    1. Combine the sugar and water in a saucepan and bring it to a simmer, dissolving the sugar completely. Add the fresh mint leaves and remove from the heat.

    2. Cool the liquid to room temperature. Completing this is the hardest part! Place it into a jar to cool in the refrigerator for 12 hours.

    3. Strain the simple syrup over some ice cubes.

    4. Make sure that you have your lemons cut and ready to juice for the next step, (if you would like to garnish with some lemon slices, set one aside).

    5. Juice the lemons into the chilled syrup.

    6. Seal your container or cocktail shaker and shake gently to mix well.

    7. Pour some of the finished mixer into white wine glasses.

    8. Top off with some prosecco to form a perfect bubbly cocktail for a hot day. Happy hour, anyone?

    Storage & Helpful Hints

    The mint infused simple syrup outlined in the beginning of this recipe can be made far in advance. Since this is the only part of the process that involves cooking, feel free to make a whole bunch and keep it in the fridge! It will store safely for up to three weeks.

    Can this be made as a "mocktail"?

    Of course! Simply replace the sparkling white wine with either sparkling cider, or club soda. The bright lemon flavor and mint simple syrup are the essential flavors, so just make sure that whatever you mix it with works well with those.
