Making the Simple Syrup
- Add the water and sugar to a small saucepan, add place over medium heat.
- Once the sugar is dissolved, add the mint leaves and remove from heat.
- Once it's cool enough, place in a container and refrigerate 12 hours or more.
Creating the Cocktail
- Strain the syrup into a mason jar or pitcher with ice.
- Cut the lemons in half and juice them into the container containing the mint syrup and ice.
- Add ice and shake!
- Pour into glasses dividing evenly (more syrup mixture equals a sweeter cocktail) top off with Prosecco, garnish with fresh mint sprigs, and enjoy! Cheers!
