With some olive oil, raw carrots, kosher salt, pepper, parmesan cheese, and a hint of garlic, you can create a nutritious side dish with tons of flavor. We guarantee that this dish will be a hit on your family dinner table any time of the year.
This recipe is naturally gluten free, vegetarian, and is a great example of how you can get the best flavor out of most food by treating it very simply. Easy Creamy Cheesy Mashed Potatoes!
Nothing beats the creamy texture of this easy cheesy mashed potatoes recipe! Whether you are making Christmas dinner or pork chops during the week, this delicious side dish is the ultimate comfort food.
Ingredients
- Carrots - Fresh carrots as opposed to frozen are essential, as the frozen ones will not get the sweetness we are looking for.
- Olive oil - A light or pure olive oil is suggested, since extra virgin doesn't do well when exposed to high temperatures.
- Salt - This serves two purposes. It performs the usual trick of accentuating and concentrating the flavor of the oven-roasted carrots, but it also helps them cook evenly by removing moisture.
- Black pepper - Unless you just can't, use freshly ground.
- Rosemary - We love this fresh herb.
- Garlic - You'll need to use garlic powder, or another type of dried garlic, the fresh stuff will just burn too easily.
- Parmesan - The cheesy crispy parmesan crust is a huge part of what sets this recipe apart. Real Parmigiana Reggiano is the best.

Instructions
Coat the carrots evenly with all of the oil and seasonings on a foil lined sheet pan.
Bake at 425 for roughly 40 minutes, until they are tender and starting to brown.
Sprinkle the cheese on top.
Return to the hot oven for the cheese to melt and crisp.
Serve and enjoy!
Helpful Hint
Carrots don't always come in consistent sizes. In order for large carrots to be fully cooked, they will need to be cut into smaller pieces to create an even size. Keep in mind also that the cooking time will vary based on size also.
Variations
There are so many different ways that you can make this carrot recipe to suit your personal preference.
- Baby Carrots - This very simple recipe is also very quick when using these. You can cut the time down to 20-25 minutes, or even shorter!
- Different oil/fat - Melted butter, avocado oil, or an oil mixture will give a decidedly different flavor, (just remember that the smoke point needs to be high temperature, just use the oil from the butter, not the rest.)
- Seasoning - It should come as no surprise when we say that this is a matter of taste! You can apply your favorite smoky spice rub, or for holiday dinners, some warm spices, (nutmeg, cinnamon), and instead of the crispy saltiness that the parmesan coating provides, you can drizzle over some maple syrup instead.

- Knife - No kitchen is complete without a good, sharp knife like this one.
- Cutting Board - This commercial grade cutting board will last practically forever, and is much safer than wood when it comes to bacteria.
- Sheet Pan - This pan provides even heat, and won't warp at high heat.
- Peeler - Don't spend a fortune on a vegetable peeler, since when they start to go dull, they can't be sharpened.
- Kitchen Scale - Precision is important, and this scale assures that.
- Cheese Grater - We always suggest a microplane for this job, as it's equally useful as a zester.
Storage/Reheating
These crispy parmesan carrots will stay fresh in the refrigerator when stored in an airtight container for 5 days. Freezing them is not suggested, as they will become very soggy when thawed.
They can be reheated in the microwave, but to preserve the roasted texture, they are best when reheated in a 350 degree f oven in a single layer for about 10 minutes.
Chef Tip
The magic of a garlic parmesan roasted carrot is in a nice, even cook. The only way to ensure this is to make sure that they are lined up on the pan in an even layer. Don't stack them up on each other, or they will just be soggy and soft.
Of course you can use a different cheese. However, using another type of hard grated cheese would probably work out best for this recipe.

Easy Oven Roasted Carrots with Parmesan Recipe
Equipment
- 1 knife
- 1 Cutting Board
- 1 vegetable peeler
- 1 Sheet pan
- 1 Kitchen Scale
- 1 cheese grater , microplane suggested
- 1 Aluminum foil
Ingredients
- carrots , peeled, and whole.
- oil , pure olive, or olive oil blend
- salt
- black pepper , fresh ground
- garlic powder , or granulated
- parmesan cheese , freshly grated or shredded
- rosemary , fresh, finely chopped
Instructions
- Heat oven to 425℉.
- If carrots are not evenly sized, cut the largest ones to create an even size throughout.
- Toss carrots with oil, salt and pepper, garlic, and rosemary to evenly coat.
- Line the sheet pan with aluminum foil, (parchment paper will cause the carrots to hold too much moisture).
- Bake the carrots in the oven for roughly 40 minutes, until lightly browned on the exterior, and tender on the inside.
- Add the parmesan on top, forming an even layer.
- Continue roasting for an additional 10 minutes, until the cheese begins to melt and crisp.
- Remove from oven and serve right away.
